INGREDIENTS
500 grams tomatoes
2 coloured capsicums (colours of your own choice)
1 cucumber
½ cup olive oil
¼ cup balsamic vinegar
2 tablespoons sugar
Wash and dry all your vegetables.
Chop the tomatoes into quarters.
Cut and remove the seeds from the capsicums and chop into bite size pieces.
Slice the cucumber lengthwise then cut in half and chop into 2cm size chunks.
In a large bowl mix olive oil, balsamic vinegar and sugar. Whisk for a few seconds. Place all the chopped vegetables into the bowl and gently mix together.
